I’ve been eating Theresa and Gus’ Mexican food for as long as I’ve been living in Dublin – which is over a decade. The couple have been creating tasty Mexican eats long before the burrito buzz hit Ireland, so I was thrilled to get to go and shoot at their new venture, K Chido, a colourful lil’ Mexican food truck on Chancery Street (on the red Luas line – hop off at Four Courts and double back) boasting a mouth-watering menu, for Image Daily.

Ciara O’Halloran worked her styling magic, pairing the vibrant food with grown-up, earthy tones. We shot everything just beside the truck, absorbing the hustle and bustle and, of course, “testing” the dishes along the way. One of my fave dishes on the menu is the pulled pork tacos, served with Mexican rice, refried beans, chunks of avocado, zingy slices of red onion, a sprinkle of coriander and some juicy lime wedges. I’m getting hungry just thinking about it now!
